It’s been a whirlwind week! Last week I did so much baking, I hardly had time for writing! I hit 1K followers on Instagram today and I can’t believe it! Thank you for the support and love you’ve shown; it means so much to have the foodie community behind me!

And now onto the recipe I meant to post last Monday…
Mint & chocolate. Are you a fan? I’m pretty indifferent about mint, actually. I love mint green color, but the flavor often is too strong for me. However, when paired with my favorite chocolate cake…well, I’ll let the pictures speak for themselves.
These chocolate cupcakes are piled high with a light minty meringue. I think using meringue frosting here is a good call, because it adds another level of refreshment. These cupcakes are not heavy whatsoever. If desired, you could definitely use buttercream but I recommend trying out the meringue!
I used these cupcakes for the stego herd I created for National Dinosaur Day part 1. How cute are they?!
